No-Bake Energy Bites

Delicious and quick to make energy balls – no baking required!

  • 1/2 cup of seed or nut butter of choice
  • 1/3 cup honey
  • 1 tsp pure vanilla extract
  • 1 cup old-fashioned gluten free oats (raw)
  • 2/3 cup toasted, sweetened organic shredded coconut
  • 1/2 cup ground golden flaxseed
  • 6 Tbsp Enjoy life mini dairy free chocolate chips
Method
In a mixing bowl, stir together seed/nut butter of choice, honey and vanilla extract. Add remaining ingredients and stir until evenly coated. Transfer mixture to refrigerator or freezer and chill until set. Remove from refrigerator and shape into 1-inch balls. Store in refrigerator in an airtight container.
