Whole Wheat Superfood Banana Loaf

This loaf also has chia and hemp seeds which are high in dietary fibre, protein and essential fatty acids.

Dry
  • 1 1/2 cups of whole wheat flour
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1/2 tsp of cinnamon
Wet
  • 3 ripe banana
  • 1/2 cup of melted coconut butter
  • 3/4 cups of coconut sugar
  • 1 tbsp cider vinegar
  • 1 tsp vanilla extract
  • 1/4 cup of hemp seeds
  • 1/4 cup of chia seeds
  • 1/2 cup of your choice of nut milk
  • 1/2 Enjoy life chocolate mini chips or chunks
Method
Soak Chia seeds in nut milk of your choice for 5 min before adding to wet mixture. Mix and the wet and dry separate then combine the two. Once the two have been combined add 1 tbsp of apple cider vinegar and stir a little more. Bake in the oven at 350 for 40 min or until tooth pick comes out clean.
