- 2 cups quick oats
- 1/4 cup shredded coconut
- 2 Tbsp ground flax
- 2 Tbsp hemp seeds
- 2 Tbsp chia seeds
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup sunflower seed butter (or any seed or nut butter)
- 1/3 cup honey, or brown rice syrup if vegan
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 1/3 cup mini chocolate chips (dairy-free if vegan)
In a large mixing bowl, combine oats, coconut, flax, hemp seeds, chia seeds, cinnamon, and salt. Set aside. In a medium-sized sauce pan, combine honey, sunflower seed butter, coconut oil, and vanilla. Mix until mixture begins to boil, remove from heat. Pour wet mix into dry mix and stir until fully incorporated. Wait till mixture begins to cool then fold in chocolate chips.
Pour into glass baking dish lined with parchment paper. Using a spatula or your damp hands, spread the mixture evenly in the pan, pressing down firmly. Place a sheet parchment over the bars before placing in the freezer. Freeze bars until they become firm, approximately 20 minutes then serve.
